Amchur or Sour Dried Mango Powder
One of the most mysterious Indian spices, is Amchur or dried unripe mango powder.
Made from unripe mangoes or kairi and is usually tart, pale and a beige colour. Mangoes are a seasonal fruit and to help preserve its taste and flavour, Amchur is made!
It’s sour yet honey-like to taste and has one of the most versatile uses in the North Indian spice repertoire. It is used to flavour meats, curries, chutneys and pickles. Its is also an effective meat tenderizer!
It is added to drinks and sherbets to give an extra tangy mangoey zing! It tends to add a bright acidity to the dish in which it is added.
